Lasagna

How to make a simple and easy pinoy lasagna using your leftover spaghetti sauce.

Ingredients:
Lasagna – cooked per package directions
Left over spaghetti sauce
1/2 bar of Eden cheese, grated, divide into 2
1/2 bar of Eden quickmelt cheese, (sliced this only when it is time to bake the lasagna)
1 tbsp butter
2 tbsp flour
1 cup milk
1/4 cup water
salt and pepper to taste

Procedure:
For the white sauce:
Melt butter in a pan, add flour, keep on mixing until the flour is cooked (when it smells like bread). Add water and mix, add milk and continue mixing, then add half of the grated cheese. Add salt and pepper to taste. Cook until mixture has enough thickness.

Line lasagna noodles in a backing dish, layer with the spaghetti sauce, layer with lasagna noodles again, another layer with spaghetti sauce and half of the white sauce. Repeat this layers 2 times more. Add the remaining grated cheese on top of the white sauce, and then add the sliced quickmelt cheese.

Baked at 225 degree Celsius for 45 minutes, till the grated cheese turns brown and the quickmelt cheese are melted.

Serve hot or cold.

Burritos

Soooo… I was kind of craving for them for days, I made some real quick.

Burritos

This is so easy to do, ingredients are easy to find, basic actually.

Ingredients:
Tomato sauce (I used Hunts)
Ground beef
Sliced tomatoes
Sliced onions
Sliced carrots
Cooked rice
Salt and pepper to taste
Sugar
Chili powder
Oil
Tortilla wrap
Grated cheese (I used 3 kinds – parmesan, mozarella and Eden cheese)

OR—- you can use leftover spaghetti sauce if you have them, then you’ll just need the vegetables, cooked rice, chili powder, cheese and tortilla wrap 🙂

How to:
Heat oil in a pan, then add ground beef, cook till done. Add in tomato sauce, salt, pepper, sugar, and chili powder according to your preferred taste, simmer for 20 minutes.

Add the carrots, tomatoes and onions, simmer for another 15 minutes.

Transfer to a container, add in rice, little by little. Do not put too much rice that it will look dry.

Place tortilla wrap on an aluminum foil enough to wrap it, then spoon the tomato mix on it, top with grated cheese mix. Wrap the aluminum foil. The put in the oven toaster or oven to heat it.

Serve hot.

You can make more than you can eat, put them in freezer/fridge then reheat when you want to eat them :).

Buchi – Glutinous Rice Balls

This is another favorite.. especially by my little boy, he gets to help whenever I make this delicious snack, rolling the glutinuous rice flour into balls :D.  Also  did you know that sesame seeds have health benefits?  That added a plus to this healthy snack.

For the fillings you can put anything you like… the one above is cheese :).  I can stare at this ball for hours lol.. making me hungry..

Ingredients:
2 cups glutinous rice flour
1 cup rice flour
1/4 cup light brown sugar (white will do, I always prefer the brown sugar)
sesame seeds
1/4 cup water (add more if needed)
Oil for frying

Procedure:
Combine the glutinous rice flour and the rice flour.  Make a well and add the water.  Knead to turn into a dough.  Then roll it like a log.

I am doing this with the help of the my 5 year old.. lol.  He gets to sprinkle flour on the log rice flour

Cut them into desired pieces, flatten it and add any fillings that you like.  My  fillings were cheese, strawberry jam and peanut butter.

After putting fillings fold and roll them into balls, then roll the balls in sesame seeds.

Deep fry until golden brown and drain.

Cheesy Baked Mac

My own recipe of cheesy baked mac which is my family’s favorite…

Too cook just enough for us I always use these measurements.

Ingredients:
1/4 kilo macaroni
1/4 kilo ripe tomatoes (or more if you like, peeled)
1/4 kilo ground pork (beef or chicken will do)
1 med sized onion (sliced)
2 cloves garlic (crushed and chopped)
1 pouch tomato paste
1 cup water
Seasoning to taste (optional)

White sauce ingredients:
1-2 tablespoon butter
1 bouillon chicken (or chicken powder or chicken stock)
1 can 230ml evaporated milk
1 cup grated cheese (quick melt or whatever is available in your counter 🙂 )
1 and 1/2 tablespoon flour
1/2 cup water
Seasoning to taste (optional)

Toppings:
1 cup grated cheese

Procedure:
Cooked macaroni according to package instructions, drain and set aside.

Next, boil the tomatoes on 2 cups or more of water, pressing them till they looked like they are mashed, set aside.

Next in a frying pan, fry the garlic, then onion, then the ground pork till brown, then add the water simmer.. then add the boiled tomatoes including the water they were boiled from, simmer some more.. then add the tomato paste. Simmer until it is thick, looked like a tomato sauce. Add seasoning if desired. Then add the cooked macaroni. Set aside

Make the white sauce:
In another pan melt the butter, then add in the flour mixing it well.

Then add the water continue mixing, then add the bouillion (dissolve in a little water), add the milk just keep on mixing so this will not become sticky. If it is sticky, add a little more water. Then add the grated cheese. Add seasoning if desired. Remove from heat and set aside.
If using chicken stock, omit the water.

Baking:
In a baking pan put in the macaroni, we are going to make 2 layers. First layer macaroni, then top with white sauce, then grated cheese. Then put in another layer macaroni, then white sauce then more grated cheese. Baked in microwave oven for about ten minutes or depending on how high the settings of your microwave oven until the cheese on top is melted.. If using conventional oven, baked until the top is brown.
